Cooking with the State Jalapeno Toaster

The Picture on the Left is my Jalapeno Peppers stuff with Colby & Monterey Jack Cheese and wrapped
with a quarter slice of bacon and a toothpick through each Jalapeno to help hold the bacon on and
to keep the Jalapeno from falling through the BBQ Toaster Holes.
The Picture on the Right  is my Jalapeno Peppers after I Cooked them on my BBQ Grill using Direct Heat
for 20 min. Checking on them every 3 min. to make sure they were not burning.
Note: Longer Cooking time may be needed if your cooking other Meats.
SURE if you want to cook with Indirect Heat at a Lower Temp. the Rack will work Great
Before you use your BBQ Jalapeno Toaster Rack
you should season it like a cast iron skillet to prevent rust. Give the Rack a good cleaning and spray a light coat of
cooking oil over all of the surfaces and bake it in the oven for about 30 minutes at 175 degrees be sure to place it on a
Cookie sheet. After you have seasoned the Rack, it will pretty much be a non-stick Rack.
I use a All Natural Original Canola Cooking Spray.
After you have used your BBQ Jalapeno Toaster Rack

Jalapeno Preparations
The best jalapenos for stuffing are the large ones that are straight and tapered. Cut off the tops of the jalapenos and
set them in the Jalapeno Grill Rack . Using an apple corer or small paring knife, remove the seeds. Now stuff the jalapenos with
your favorite stuffing. Some ideas are cheese, refried beans, sausage, cornbread, scrambled egg, cream cheese, venison, dove,
quail, pork, or beef. Be sure to put a toothpick through them because even the largest pepper will fall through the grill when
it gets done enough. Another suggestion is to use a quarter slice of bacon and the toothpick keeps it on. When the bacon is done,
the peppers are done. If your stuffing is meat, you may want to poke a small hole in the bottom of the pepper to allow drainage.
Enjoy!
